Zucchini Slice
This gluten + dairy free recipe is from @ournourishingtable, which I have made often. It’s packed with veggies (nutrients + fibre), healthy fats and protein. I do however add an extra egg for a touch more protein as well as spinach + garlic, and this time some chives because I had them. I do usually omit the tomatoes just as a personal preference, but instead top with my fav tomato chutney from @beerenbergfarm. It is one of the cleanest I’ve found in the supermarket.
For those who run out the door in morning without breakfast or only their coffee in hand, this is a great option for you.
Eating something, ideally balanced + high protein, before your morning coffee can do wonders for your energy levels, stress response, mood + your digestive system.
If choosing this for breakfast, I would suggest following up with another protein rich snack or light meal.
